These cookies made with pumpkin and chocolate chips are one of the first desserts I bake each fall. They taste great and have a soft, cake-like texture with a nice pumpkin spice flavor. The best part is that they are simple to prepare. You can mix everything in one bowl, and you don’t need a mixer! They will be ready to enjoy in less than 30 minutes. What could be better? At first, I shared this recipe without using an egg, but after trying it again, I thought adding an egg and some baking powder would make it even better. After testing it three times, I am thrilled with this new version. What do you think about pumpkin cookies?
